Franz Gilbertson and Jacob Daley first met in high school through a mutual friend, Ben the one-eyed mystic (aka Seamus, Hamo, Churt Beynolds). Over the years they have been band mates, roommates, and partners in all manner of skullduggery.
The year was 2001 and Ben, for no good reason, traveled across the sea to visit and explore the strange and beautiful lands of Western Europe, breaking up the trifecta and leaving Franz and Jacob no choice but to follow suit.
"Having fled Amsterdam with great haste we made our way to Catalonia because I remembered seeing it on television during the Summer Olympics of 1992. En route from the train to an unknown destination, while navigating an undulating sea of large, black umbrellas held by scowling locals, we found ourselves rather famished. One or two misadventures later through less than reputable cafes and bars, we discovered the ubiquitous and affordable Bocadillos of Spain. They soon became an integral part of the day with Cafe con Leche in the morning and great quantities of Estrella Damm in the afternoon and evening whilst pursuing various adventures through the back alleys, placas, and barrios the guide book advised against."
Travelling throughout southern Spain and even into Morocco was a grand experience that introduced the pair to authentic Spanish culture. Ever since these experiences Franz and Jacob have been lamenting the absence of bocadillo style sandwiches and the culture of the Spanish neighborhood cafe. They missed these sandwiches and their trappings so much they decided the only thing to do was to create a place where they could sit down with a sandwich and beer…Enter Chico Madrid.
